I have some very picky eaters at home. This makes for a lot of opinions about healthy meals.
For some reason, meat/potato/veggie dishes are not a favorite for my kids. However, my husband totally digs those types of meals. Thanks to a close friend of mine, I have finally found another dinner that makes my kids beg for seconds.
We had dinner last week with our friends Rob and Lisa Levin. Lisa is a very good cook, and I have learned many cooking recipes from her. The dinner was so yummy and I was surprised to see how both of my kids loved the meal, especially my pickiest eater, my 11-year-old son. Not only does this meal taste great, but also it’s very easy to prepare and requires little cleanup — a plus for a mom who works as a baker from her home kitchen.
This is a slow-cooked meal, so you will have to prepare it ahead of time, about 3½ hours prior to serving. One trick Lisa has turned me onto is using Reynolds baking bags. I have used them with turkey, ribs and roasts. They keep your meat moist while cooking and make cleanup little to nothing. These bags can be found at any grocery store near the sandwich bags. This has been the first time I have put potatoes and gravy in the bag with meat. I was amazed how it turned out.
The meal is best served with a side of steamed veggies or your favorite salad. Be prepared to be blown away by the smell of this deliciousness. Last night my husband came home from work to the yummy smell of our family dinner. It brought a smile to his face and a smile to my heart.
