Simplicity is my favorite ingredient. It goes well with everything. It’s always fresh, nourishing and contrary to popular belief — it is not boring.
My husband Russ and I have had a switch in family duties over the past year. He’s taken on more of the home chores, shopping and most of the cooking. For years, I did all the meal preparation unless he was firing up the grill. Now he is daily on top of what’s for dinner as well as packing my lunch five days a week.
Russ knows how much I enjoy fresh, healthy meals. Together we’ve worked at simplifying our menus. Years ago it seems as if you’d be stuck with processed and prepackaged convenience meals, but the sacrifice of health wasn’t worth it to us.
We now have an arsenal of tasty treats that would fit into a myriad of food plans.
Almond butter is on our weekly list of “must makes.” A tablespoon or two with an apple in the afternoon gets me over the slump before quitting time. It’s cheaper to make, but better than that, you can’t beat the taste!
