Most holidays spent with my grandparents include this yummy fruit salad that my Grandma Dee Dee makes.
My favorite time of year to have it is during Easter. It is a light, sweet treat that is usually served as a side dish at our meals.
I have loved making this dish for potlucks and barbeques with friends and family. It is simple to make, but takes some planning. I whip up this salad the night before I am to serve it because it takes eight hours to set up.
One thing I have done to make it look fun is to use pastel mini marshmallows. If you are an Oregon Duck fan, like me, you can always use just green and yellow marshmallows. For a baby shower, use the blue and pink mini marshmallows. Another variation is to use different fruit. You can garnish with cherries or strawberries.
Eating this marshmallow fruit salad will always hold memories of my Grandma Dee Dee and the times we spent at my grandparents’ dining table. It is a dish I plan to share with my grandchildren someday. I hope they will enjoy it as much as I do.
