One of the things I looked forward to about having children was throwing their birthday parties. I had visions of ribbons and balloons blowing in the wind, cute little kids with frosting on their noses and squeals of excitement filling the air.
When I was pregnant with my first child, I took all of the Wilton cake decorating classes at Michaels and stocked up on all of the tools.
For the very first birthday party I threw, my son had an elaborate fondant farm cake complete with cake pop animals. However, we somehow forgot to sing “Happy Birthday” and blow out the candle before cutting the cake! I can’t even imagine that happening now.
While my children’s birthday parties have not been Pinterest perfect, I have found a fresh strawberry cake recipe that is both flavorful and messy enough to cover the children’s faces.
Versions of this recipe for strawberry cake are everywhere, but I like this particular recipe because it uses more strawberries than most of the others.
I have made this cake for several birthday parties now, along with chocolate cupcakes, and have never had leftover strawberry cake.
Since the kids and I went strawberry picking last week, I made my usual cake with the fresh strawberries we picked instead of frozen ones. I’ve included the variation in the recipe.
