Fisherman Nick Pappas needed a market for his catch. Construction worker Bob Nicklason lost his hand in an electrical accident and needed a different job. The Pappas family constructed buildings. Those three factors came together in 1981 and resulted in the opening of a meat market at 2295 Diamond Lake Blvd. in Roseburg. The Pappases constructed the building, Nick Pappas caught the fish and Nicklason worked in the store.
