In an effort to lose that last 5 pounds of baby weight, I am doing a 30-day “no sugar challenge.” Those who know me well can confirm that this is no small feat because I love ice cream… and cookies, pie, candy, chocolate and basically anything and everything that contains sugar. The fact that I’ve been able to cut cold turkey (I’m 15 days sober now) proves just how bad I want to lose those not-so-lovely love handles.
In an attempt to curb my cravings (and trick my body into thinking I’m giving it what it wants), I’ve turned to making fruit and coconut milk smoothies daily. Yes, I know those things both contain sugar, but this challenge isn’t so extreme that we’ve cut out every last bit of fun.
I’ve actually been pleasantly surprised with some of the blended creations I’ve made. And just in case there is anyone else out there crazy enough to be kicking sweets to the curb, I thought I’d share my favorite recipe.
Fruit and coconut milk smoothie
Combine in a blender:
1 cup ice
1 mango, cubed
1 cup baby spinach
1 ½ cups vanilla coconut milk
(Sometimes I even get a little crazy and add a few strawberries)
Blend until smooth.
It blends out green, which looks extra healthy and will likely win you brownie points with all of your health-crazed friends.
