Douglas County Moms: Go for the green (borscht, apples) while cheering Team USA

The Olympics always rekindle my interest in travel. My heart beats a little faster, and I can’t help but want to see the sights and sounds, to experience the culture and take in the arts of another people, another place.

I confess to enjoying the cultural vignettes almost as much as the sports. The Olympics offer an easy opportunity to brush up on history, culture, geography and international politics, all of which I enjoy.

Although it would be impractical to travel to Sochi with two small children, I decided to bring the flavors of the 2014 Winter Olympics to our home.

While looking for recipes I came upon a wonderful food blog by a girl who was raised in Russia but now lives in the United States.

I wanted to find authentic Russian recipes, but I also wanted to make something that I knew my family would eat, so I looked for recipes that had familiar ingredients prepared in a different way.

For the night of the opening ceremony, I made Green Borscht, which is a spinach potato soup.

I’ll admit we were all a little nervous as we took our first bite, but we were pleasantly surprised by how good it was. We each had two servings.

The soup is fresh and light, but surprisingly filling. It is also simple to prepare.

As we ate our soup topped with sour cream and hard-boiled eggs, we watched Russian tennis player Maria Sharapova give a tour of Sochi and listened as she compared Russians’ use of sour cream to Americans’ use of ketchup.

I also made bulochki, or Russian yeast rolls, with an apple filling. They were delicious and not too difficult to make. I always hold my breath and cross my fingers when making bread, but these turned out well, despite lots of interruptions from the kids. The rolls are typically served with milk or tea and make a great snack while you are watching the Olympics and cheering for Team USA
