Last summer, I wanted to find a yummy, healthy snack that I could have for those on-the-go busy summer days.
I saw a recipe for No Bake Energy Bites and I made them.
I was hooked.
They. Are. Yummy.
They are also great for packing with you to the park and for travelling in the car if you need a quick, healthy and filling snack.
Plus? They are so easy to make, even your little ones can help make them with you!
And the other great thing: No need to turn on your oven, which I love during the summer.
This recipe calls for honey, and you can find lots of yummy local honey at the farmers markets throughout our county.
I also was able to make this recipe gluten- and dairy-free for my son. I just substituted Bob’s Red Mill gluten free oats for the oatmeal, and I use Enjoy Life Semi-Sweet Chocolate Chips and Gluten, Dairy, Nut & Soy Free Mini Chocolate Chips.
Just a word of caution: If you do these make these, they are addictive.
No Bake Energy Bites
1 cup (dry) oatmeal
1/2-cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla
Mix ingredients together in a large bowl. Roll into bite-size balls. Refrigerate to set. Enjoy!
