Jayne Gautreau: Perfect 4th of July dessert

In the summer of 1999, I came out to visit Oregon to meet my future mother-in -law.

While I was staying at her house, she introduced me to a delicious dessert that has now become a family favorite.

With summer berries being in abundance and the 4th July celebrations just around the corner, this is a perfect dessert to share with family and friends (and I am pretty sure you will be asked for a copy of this recipe!)

As I was eating this dessert at my mother-in-law's home, I asked her the name of it and she said they called it "Yummy Nummy."

if you make this dessert for yourself, you will figure out very quickly the reason for the name.

Yummy Nummy

Crust
1 cup flour
1 cube margarine or butter
1 cup chopped nuts (optional)

Melt margarine and mix with flour and nuts, pat into a 9x13-inch pan. Bake at 350 degrees for 10 minutes.

Cream cheese filling

Mix together 8-oz softened cream cheese, 1 cup powdered sugar and 1 cup cool whip. After crust has cooled, pour the cream cheese filling on top; refrigerate while making the berry glaze to go over the cream-cheese filling.

Berry glaze

1 cup sugar

1 cup water

3 T corn starch

2 T light karo syrup

Pinch of salt

3 T berry Jell-O

Mix the berry glaze together, bring to boil while stirring. Turn heat off when the mix starts to thicken. Pour the berry glaze over your choice of berries or fruit you put on top of the cream cheese filling.
