Jill Fay: Blackberry Cobbler

This is the easiest most yummmy recipe I have came across for Blackberry cobbler/pie. My kiddos and I enjoyed picking our own berries and then making cobbler together. This is fool proof even with making with kiddos. We did the gluten free option since my daughter and I are both gluten free and WE all four ate the whole pie plate in one evening!! Delish!!

Here is the recipe:

Prep time 20 min. Bake time 60 min.
Serves about 6-8.


1 stick butter
1 1/2 cup sugar
1 cup self rising flour (or gf flour)
1 cup milk
2 cups blackberries fresh or frozen

Prep instructions:

Preheat oven 350 degrees
Melt butter. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour melted butter in and whisk all together. Butter a baking dish.
Rinse and pat dry blackberries. Pour the batter into the buttered baking dish. Scatter blackberries on top of the batter. Sprinkle 1/4 cup sugar over top.
Bake in the oven 350 degrees for 60 minutes or until golden and bubbly. If you desire, sprinkle an additional teaspoon sugar over cobbler 10 min before done. I suggest a bit larger dish than a pie plate since ours oozed over a little onto baking sheet I put under (since I had a feeling). And I would suggest checking the top about 45 min in to make sure top isnt getting too brown. You can cover with foil to finish baking if needed. We also loved topping off with whip cream but vanilla ice cream would be amazing ala mode!!
